Recipe for Bread with Wild Herbs
20 g of yeast, 1 tsp. of honey, 200 ml of lukewarm water, 250 g of spelt flour, 3 Tbsp. of walnuts, 1 red onion or 3 Tbsp. of roasted onions, 1 Tbsp. of olive oil, 1 tsp. of salt, 6 Tbsp. of wild herbs, chopped
Water, 1 Tbsp. sea salt, 1 Tbsp. pepper
Dissolve the honey and yeast in the water. Let it sit briefly. Add the onions, salt, and walnuts to the flour, then combine all ingredients and knead to form a dough.
Let rise for one hour. Form two loaves with the dough, and sprinkle with water, salt and pepper. Let the loaves rise again, then bake at 180° C for 30 minutes.
