In the kitchen of the Knappenwirt, the innovative tastes and techniques of modern cuisine are applied to traditional Styrian fare, with dazzling effect. Using predominantly regional ingredients prepared with painstaking care, Chef Michael Lohr invites you to quench your thirst and sate your hunger with his creative culinary delights. Our comprehensive menu will satisfy the adventurous gourmand as well as the traditional fan of classic Austrian specialties. We love to spoil our guests with our four to six course tasting menu – though we ask that you reserve in advance. Travel groups and bus tours are also warmly welcomed.

Recipe for Bread with Wild Herbs

20 g of yeast, 1 tsp. of honey, 200 ml of lukewarm water, 250 g of spelt flour, 3 Tbsp. of walnuts, 1 red onion or 3 Tbsp. of roasted onions, 1 Tbsp. of olive oil, 1 tsp. of salt, 6 Tbsp. of wild herbs, chopped

To coat:
Water, 1 Tbsp. sea salt, 1 Tbsp. pepper

Preparation:
Dissolve the honey and yeast in the water. Let it sit briefly. Add the onions, salt, and walnuts to the flour, then combine all ingredients and knead to form a dough.
Let rise for one hour. Form two loaves with the dough, and sprinkle with water, salt and pepper. Let the loaves rise again, then bake at 180° C for 30 minutes.
